Cheese making is the process of converting milk into a stable, preserved product through coagulation, acidification, and aging. The curd is cut into small cubes to release whey, then heated and stirred to expel more whey. The curds are drained, salted, and pressed into forms.
Fresh cheeses are not aged and are consumed within days or weeks. Types include mozzarella, ricotta, cream cheese, queso fresco, and chevre (goat cheese). Fresh cheeses are made by acidifying milk with vinegar, lemon juice, or citric acid rather than relying on bacterial cultures. The process is simple and requires only basic equipment. Fresh cheeses are stored in the refrigerator and used within 1 to 2 weeks.
Aged cheeses are salted and pressed, then aged for weeks to years. Cheddar, gouda, parmesan, and swiss are aged cheeses. The aging process, called affinage, develops the cheese's flavor, texture, and aroma through enzymatic activity. The cheese is stored in a controlled environment at 10 to 14 degrees Celsius (50 to 57 degrees Fahrenheit) with 80 to 85 percent humidity. The rind is turned regularly and may be washed with brine or oil.
Basic cheese making equipment includes a large stainless steel pot, a dairy thermometer, a long knife for cutting curds, cheesecloth or butter muslin, cheese molds, a cheese press, and wax or cheese coating for aging. A pH meter or test strips measure acidity, which is critical for determining the correct timing for each step.
