Pectin is a natural polysaccharide found in fruit cell walls that forms a gel structure when combined with sugar and acid. Low-pectin fruits include apricots, blueberries, cherries, peaches, pears, pineapples, and strawberries. For low-pectin fruits, commercial pectin powder or liquid is added. Standard jam recipes use equal weights of fruit and sugar when using commercial pectin formulas. For natural pectin methods, the ratio is typically 700 to 800 grams of sugar per kilogram of fruit (3.5 to 4 cups per pound). Acid, usually in the form of lemon juice, is added when the fruit is low in natural acid. Commercial pectin packages specify exact sugar requirements, which must be followed precisely for proper gel formation. Reduced-sugar pectins are available for low-sugar formulations but produce softer gels.
The standard processing method for jams and jellies is water bath canning. Jars are filled with hot preserves, leaving 0.6 centimeters (1/4 inch) headspace, and processed in boiling water for 5 to 15 minutes depending on jar size and altitude. Processing times at altitudes above 300 meters (1,000 feet) must be increased. Sealed jars are stored in a cool, dark location and maintain quality for 12 to 18 months. Freezing is an alternative preservation method that does not require heat processing.
Improper gel formation is the most common problem, caused by insufficient pectin, inadequate sugar, incorrect pH, or over-cooking. Crystallization results from excess sugar. Mold growth indicates an inadequate seal or insufficient headspace. Syrup separation, where liquid separates from the fruit, is caused by under-ripe fruit with excessive pectin or over-cooking.
